1 1/2 tsp vanilla
1 cup of sugar
1 1/2 tsp of pumpkin pie spice
1 can evaporated or condensed milk
3/4 stick of butter
2 large yams (or sweet potatoes--I believe yams are sweeter)
2 pie crusts (graham cracker crust tastes great with this recipe)
Peel and cut yams into pieces and boil until soft. Drain water and mix yams with
other ingredients, blend at medium to high speed using an electric mixer, adding the
milk last (I don’t know if there’s any merit to mixing these ingredients in a specific
order, but I always add the milk last). For a denser pie, use condensed milk instead
of evaporated milk. Blend ingredients until smooth and pour evenly into pie shells.
Bake at 350 degrees F for about 45 minutes (a toothpick should come out of the center clean).
